Learn about Spelt Shmura Matza
For many with wheat intolerance, matza made from Spelt is a good alternative. The nature of the grain makes it easier to digest and it tastes great as well.
The differences in the grain make it harder to work with than wheat. This is part of the reason it is more expensive.
Wheat has been bred to be an easier crop to grow and it is much more abundant than spelt, so since the supply of spelt is lower, the price of the harvested grain is higher. In addition, there is a loss of 20-30% of the matza, since the baking process is more difficult than wheat.
