Wheat Shmura Matza

The most widely used grain for Matza is Wheat.

While most people think that all wheat matza is whole grain, the vast majority of wheat matza is not whole grain.

Regular Shmura Wheat flour can be made by removing all the bran. While it is not ‘white’ flour, because that comes from bleaching flour and therefore would make the flour chametz and unsuitable for Passover use. This flour is easier to knead and roll then whole wheat.

All the Wheat Matza we distribute is Whole Wheat Shmura.

All the Hand Whole Wheat Shmura Matza is baked in Sderot, Israel.

Since some customers have requested, we also have added a line of Hand Regular Wheat Shmura Matza, also baked in Sderot, Israel.

The Machine Whole Wheat Shmura Matza is baked in Atarot, Israel.

I started selling matza 15 years ago and started with the Birkat HaPesach Hand Shmura.

It is whole grain, actually it is approximately 75% whole grain and the other 25% has had the bran removed. All varieties of Whole Wheat Shmura Matza is produced with this balance.

If it was 100% whole grain, it would be too difficult to knead, roll the dough out and bake within the 18 minutes required to avoid chametz.

One reason I chose this matza was that it was Whole Wheat and, being a diabetic, whole grain has been considered a benefit because of the lower glycemic values. In addition, it has a great taste.
